- 2 cups fresh pineapple chunks (or frozen)
- 1 tbsp fresh grated ginger
- 1 cup coconut water
- 1–2 cup ice
- 1 tbsp honey or agave syrup | optional
Peel, core, and chop fresh pineapple into chunks. If using frozen pineapple, skip this step.
Grate fresh ginger using a fine grater.
Add pineapple, ginger, coconut water, honey (if using), and ice to a blender.
Blend on high until smooth and slushy. Stop and scrape down sides if needed.
Taste and adjust sweetness or ginger level as desired.
Pour into a chilled glass, garnish with lime or mint if desired, and serve immediately.
